Side2Dairy Kick-Off Event

A full-day workshop was recently held at the Technion kicking off the Side2Dairy Research Focus Consortium (RFC), which takes a holistic approach to dairy alternatives as a demonstrator of the untapped potential of side‑stream valorization.

Funded by the Council for Higher Education (CHE), the new RFC is an academic hub focusing on enhancing food system sustainability in Israel by repurposing agrifood by‑products and improving waste management capabilities. Its activities include everything from raw material pretreatment and extraction, to functionality, product development, consumer acceptance, economic impact, and LCA. The Consortium draws on the expertise of 31 researchers from the Technion, Hebrew University, Tel Aviv University, University of Haifa, Weizmann Institute, and the Volcani Center.

The kick-off event included In‑depth discussions on workgroup progress, challenges, and opportunities; a workshop on AI in research; and a tour of the new Carasso FoodTech Innovation Center, which will support the scaling-up of developed solutions. The workgroup leaders were Prof. Yoav Livney, Prof. Oded Shoseyov, Prof. Maya Davidovich-Pinhas, Prof. Zvi Hayouka, and Prof. Sabrina Spatari.
