Prof. Hagay Shpaisman of Bar-Ilan University, founder of startup Malanta Foods, shared the considerations behind producing a steak from alternative protein and presented the methods developed to industrialize the production process. Community members discussed the challenges and opportunities at the intersection of academic research and industrial implementation. This event highlighted how direct dialogue between researchers and entrepreneurs contributes to a deeper understanding of the complexities involved in developing alternative proteins at commercial scale.
